Beef Osso Buco

Osso bucco, or Osso Bucco means ‘hollowed bone’ which refers to the marrow-filled shin bone that the dish is made from. This cut comes from a muscle used constantly for movement. This means that it contains a high amount of connective tissue. This tissue breaks down when prepared using slow moist cooking methods such as casseroling and braising, which will give it a rich, full-bodied flavour and a delicious texture.
